Quinoa Porridge Breakfast with Apricot


Freeze up to 3 months the leftover of coconut milk for another recipe!

  • 1/2 cup of white Quinoa
  • 2 cups of filtered water
  • 3 Tbsp diced dried apricots
  • 3/4 tsp matcha green tea powder
  • 1/2 cup light cocunut milk
  • 0-1 Tbsp pure maple syrop
  • 3/4 tsp pure vanilla extract


  1. Cook the quinoa following the instructions on the package.

  2. When the quinoa is cooked, add the coconut milk and continue to stir until the mixture is heated through.

  3. Remove from the heat, add the maple syrup and vanilla extract.
